Chef Stormy and I were recently in Jackson, TN to do a live cooking show at the Jackson Madison Library and featured President (James) and Dolley Madison’s favorite Black Pepper, Cardamom and Ginger cake. They have invited us back to do a fundraiser.
We had a wonderful show and just love what the library and Michael Baker are doing to advocate literacy. Another good friend in Jackson and fan of literacy is Doctor Danny Winbush and his wife, d.n. English – the famed author. They own Main Street Publishing and publish books while holding writing contests as well for up and coming authors. Chef Stormy and I were very happy to do the cooking show for the library.
But the real show stopper was my historic visit to The Old Country Store and Casey Jones Home & Train Museum! When I lived in Jackson I never made it over to see the HERO of Tennessee, Casey Jones – who lived in Jackson. Casey died at the controls of his train saving the lives of all of the passengers on board in a historic crash. He has had Disney shows named after him, CD’s, music, DVD films and movies to say just the least. The Casey Jones original home and museum with store and more is a terrific place to stop and visit at. I recommend staying the night in Jackson and also going to see several other tourist based stops like The Rock-A-Billy Hall of Fame, Music Highway Crossroads, The Carnegie Center for Art & History.

And no visit to Tennessee would be complete without enjoying a lunch or dinner at the buffet in The Old Country Store. “Be sure to git you a poke chop!” I told my daughter Rania. I really enjoyed the Chess Pie (my friend Billy Hill from Clifton, TN just loves a Chess Pie) and also paid the extra .80 cents each for the enjoyment of Corn Relish and Tomato Relish. I’m such a pig, I had to have BOTH! Voted Jackson’s Best Restaurant, The Old Country Store is blessed to celebrate 48 years in business. They are honored that the 1890’s Ice Cream Parlor has been named one of the Top 50 Ice Cream Parlors in America!
Jackson has a lot to offer, including a new stay at the up and coming Bed and Breakfast named Providence House. For now they are doing weddings, catering and events. Very soon the B&B will open in the coming years of development. But hold on, hold on there… whoa!!!!!!!!!!!!!!!!!!!!!!!!! Let me gets back ta ma Chess Pie. Did I mention “ah jus luvs mees ah chess pa!?” Man, what a hidden treasure for others to discover. I discovered mine when I was in the Navy with shipmate HillBilly.
Anne Shaw is the Chairman of the Board Emeritus and most importantly, the heart of the business at The Old Country Store. She and her husband, the late Brooks Shaw, founded Brooks Shaw & Son’s Old Country Store in April of 1965, just before I was born! “A lifelong resident of Jackson, she has given her life in service to others. Whether cooking a meal for someone or volunteering through her church, she has a true servant’s heart. She is an angel on this Earth,” per the informative website and interviews with the entire Shaw family. Here is her famous Chess Pie recipe:
Chess Pie Recipe
1 ½ cup sugar
1 ½ tbs. flour
½ tbs. Meal
1 tsp. vinegar
¼ cup milk
1 stick butter melted
1 tsp. vanilla
To Prepare :
Beat eggs. Add sugar, flour, and meal to eggs. Stir. Add vanilla, vinegar and milk. Lastly, add the melted butter. Stir all ingredients well.
Put into unbaked pie shell.
Bake at 350° for 45-50 minutes until firm in the middle.

For one (or two), Chef Johnsie has been busy recently graduating her daughter, Jasmine, in NC not two weeks after young Chef JT graduated in TN. Chef Kim continues her college studies as a nurse and Chef Stormy got her Professional in Human Resources (PHR) Certification!!! Congratulations to all of the Chefs. Both Chef Stormy and I also recently got our DNA results in from www.23andme.com while Chef Otto, our friend, did not get picked for PSY’s World Tour as his personal Chef (drat). We thought Chef Otto’s video that he made was terrific and really focused actually on good and tasty food!
