The sauce for this recipe is a delicious mixture of many things, including Worcestershire sauce. This fermented sauce was invented by John Lea and Williams Perrins (both chemists) in 1837 in Worcester, England (thus the reason it’s always capitalized when written). The original recipe for Worcestershire sauce contained vinegar, molasses, and a variety of spices, then was aged in barrels. All these years later, it’s a staple ingredient in most kitchens.
Chicken Breast Recipe
Ingredients for Chicken Breast Recipe:
- 4 large chicken breast, halved
- 1 cup panko (or other bread crumbs)
- 2 tablespoons flour
- 1 tsp. oregano
- 1 tsp. salt
- ½ tsp. pepper
- ¼ cup oil
- 1 ½ cups brown sugar
- ¼ cup prepared mustard
- ½ cup ketchup
- 1 tablespoon Worcestershire sauce
- 1 tablespoon soy sauce
- ½ tsp. salt
- ¾ cup water
- ¼ – ½ tsp. red pepper flakes (use more or less to adjust the spiciness)
- Pineapple rings (optional garnish)
Directions for making Chicken Breast Recipe:
Preheat the oven to 350 degrees. Lightly grease a 9 x 13 baking dish.
In a mixing bowl, stir together the panko (or whatever bread crumbs you choose), flour, oregano, salt and pepper.
Heat the oil over medium-high heat in a large skillet. Press the chicken into the bread crumb mixture (making sure all sides are well-coated) and place them in a single layer in the heated oil. Cook on both sides about 3 – 4 minutes.
While the chicken is cooking, mix together the brown sugar, mustard, ketchup, Worcestershire sauce, soy sauce, salt, water, and red pepper flakes, set aside. (If you are using pineapple rings as a garnish, use the pineapple juice in place of the water for the sauce.)
Place the browned chicken in a single layer in the bottom of the prepared baking dish. Pour the sauce around it (not directly on the chicken). Bake uncovered for 25 – 30 minutes. Turn each chicken piece over, so the sauce absorbs into the top of each breast, and bake 5 more minutes. Remove from the oven. Serve garnished with pineapple rings.
