Christie Brinkley is fit and fabulous at 61, thanks to her longtime vegetarian diet and daily workouts. Brinkley, who has graced the cover of over 500 magazines, never fully appreciated her youthful beauty when she was younger.
“I came across an older picture of me that someone had posted on Facebook and I totally remember feeling very fat while I was shooting it,” Brinkley told Haute Living . “And I look at it now and think, ‘I was actually really thin!’ How is it possible that I felt so uncomfortable in that body?”
Whether she felt comfortable in her own skin or not, Christie has spent most of her life being hailed for athletic good looks. In addition to making the cover of the “Sports Illustrated” swimsuit issue three times, Brinkley has become rich and famous off her stunning beauty.
Not surprisingly, Brinkley makes regular workouts a top priority. The 5-foot-9 blonde stunner, who has been a vegetarian since age 12, does yoga, strength-trains, runs and walks, Celebrity Health reported.
Christie, who follows a mostly vegan diet, typically has oatmeal with fruit with breakfast, a large salad for lunch, and pasta with vegetables for dinner.
Brinkley joins a long list of celebrity vegans, including Jared Leto and Michelle Pfeiffer. They have also credited the plant-based diet for giving them more energy, helping them lose weight, and staying youthful-looking.

The age-defying effects of a vegan diet are no surprise to Dr. David Katz, director of Yale University’s Prevention Research Center. “If you shift to a diet more about plant-based foods, you are likelier to live healthier and experience less chronic disease,” said Katz, author of Disease Proof.
Dr. Joel Fuhrman agrees. “The more greens you eat, the more weight you will lose,” said Dr. Fuhrman, author of The End of Dieting.
Christie also sneaks in calisthenics when getting ready in the morning. “I try to get in 100 push-ups every day,” she said. “It’s really easy. I keep a rolled up yoga mat under my bed.
“I throw it down and I’ll do 30 push-ups before I get in the shower. Then I do another 20 before I dry my hair, and now I’ve done 50. After I dry my hair, I’ll come back and I’ll do more.”
Brinkley got a facelift in early 2010 at around the same time her daughter Alexa Ray Joel, 27, got a nose job. Not surprisingly, her beauty has inspired mixed reactions from the men in her life. While they’re attracted to her looks, they’re also intimidated by them.
“You know guys are attracted to a woman’s looks — we’re shallow in that aspect of things — it’s just how we are made,” Christie ex-husband Billy Joel, once said. “I felt like I was undeserving — it was extraordinary that I got her. But suddenly, this beautiful supermodel dug me. It was great.”
While many people her age are looking to slow down, Brinkley refuses to let her age define or limit her.
“My age has so little to do with my image of myself because at a certain point, the number just didn’t fit how I felt,” Christie said. “It has become irrelevant to me. I just don’t feel like that number is representative of my spirit, of my energy or anything.”
