When the temperatures turn hot, the last things most cooks like to do is turn on the oven or the range! Many of us like to serve cold items during these hot summer days. It not only makes it easy on the cook, but keeps the kitchen (and the rest of the house) cool and we also save electricity. That, in turn, saves us money.
Sandwiches are very popular during the summer, especially with children out of school. Sandwiches are a fast, easy way to have a quick lunch or dinner. There are uncountable types of sandwich fillings, but I have one for you that’s rather interesting, but very good, especially for the vegetarians. This recipe is for a “Health Hoagie”. This is a sandwich that’s made up of fresh vegetables, along with cheese, creamy Italian dressing and some oregano. This sandwich can be served cold or heated in the microwave just enough to slightly melt the cheese.
There’s actually no proportions for this sandwich, but all the vegetables are served raw. If you’re maintaining a vegetable garden this summer, once the vegetable gardens start producing, you’ll have a multitude of vegetables to work with to make this sandwich. This makes one large sandwich, so if you’re especially hungry, you’ll make a meal off of this one without any trouble. If this one sandwich is more than you can eat, of course, it can be sliced in half for someone else to enjoy along with you.
If there’s a certain vegetable listed in the recipe that you don’t particularly like, feel free to omit it or use another vegetable. You can actually tailor this sandwich according to your personal taste. If you would rather have Mozzarella cheese instead of Provolone, that would be a great choice, too.

Starting with Pita bread or a hoagie roll, place a layer of creamy Italian dressing, followed by a sprinkle of oregano. Add two slices of Provolone cheese, followed by the desired amount of shredded lettuce, small diced tomatoes, chopped onions, green peppers, small slices of cucumbers, sliced carrots and chopped mushrooms. Add more dressing and oregano. Add two more slices of Provolone cheese and another sprinkle of oregano. Melt the cheese in the microwave just long enough to slightly melt it. Serve immediately.
Note: all vegetables are served raw.
