In celebration of National Fried Chicken Day on July 6, 2013, MAX’S Wine Dive announces the addition of a number of gluten-friendly items to its menu, specifically featuring its famed fried chicken. These new dishes are available to diners who maintain a gluten-free lifestyle at the MAX’S locations throughout Texas.
“We are thrilled to showcase our new gluten friendly offerings to our guests, especially our fried chicken,” said Jerry Lasco, Founder and CEO of Lasco Enterprises. “As someone who has Celiac disease, I am excited that we now have the capability for all of our guests to enjoy award-winning fried chicken – a classic American dish. There is no better way to celebrate National Fried Chicken Day than with MAX’S Wine Dive’s famous fried chicken and now, the new gluten-friendly fried chicken.”
MAX’S gluten-friendly fried chicken is made with a blend of gluten free flour and dried cauliflower fibers, which create a fried-like coating, and is served with mashed potatoes and collard greens. In order to maintain a high level of quality, the gluten friendly fried chicken is fried in a separate fryer and prepared in an independent area, where exposure to gluten is less likely to occur.
In addition to the gluten-friendly fried chicken and gluten-friendly “MAX’S Classic” pulled pork stuffed piquillo peppers, Executive Chef of MAX’S Wine Dive Dallas, Patrick Russell, has also created a variety of gluten-friendly items for summer. Menu items include “The Standard” with pan-roasted half chicken served with golden raisins and pickled, roasted and pureed cauliflower; “Yellow Squash Soup” with creamy squash scented with saffron; and “Bigeye Tuna” with seared #1 Bigeye tuna, stone fruit jam, fingerling confit and salsa verde.
MAX’S Wine Dive’s gluten-friendly fried chicken and chef-inspired gluten-friendly offerings will now appear on all seasonal menus.
Don’t forget the champagne. MAX’S is known for its signature fried chicken and champagne pairing.
