A week from Thursday is my cousin Reuben’s birthday. We’re planning a big surprise party for him here at the house and his wife Greta and I are just wrapping up the celebration details.
We think he’s going to be 49, but we’re not sure. Apparently there was a mix up with his birth records in his native Guatemala and about ten years ago after Reuben returned from a vacation in Madagascar, Homeland Security screwed up the dates on his passport.
Anyway, Greta has the techno-reggae disc jockey booked and the Spiderman inflatable waterslide is due here Tuesday and I’m in charge of the food.
Surprise! I’m thinking a menu with a Reuben sandwich as the theme, even though cousin Reuben’s favorite sandwich is a PBJ. Who comes to a party with a peanut butter and jelly theme?

For a classic Reuben always use deli corned beef and fresh, maybe even homemade sauerkraut.
Classic Reuben Sandwich
Thousand Island Dressing
Butter the outside of each bread slice. Place one slice on a medium hot pan and pile with corned beef and Swiss. Top with thousand island and put the other slice on top. Grill until browned and carefully flip over. Grill until cheese is melted, remove and serve.
Cream of Reuben Soup
A great soup on a cold day.
Cream of Reuben Soup
3 Tbs. Olive Oil
1 Small Onion, Finely Chopped
2 Tbs. Garlic, Smashed and Minced
2 Tbs. Fresh Thyme
6 Cups Chicken Broth
½ Lb. Corned Beef, Chopped
8 Oz. Fresh Sauerkraut
1 Carrot, Grated
1 Bay Leaf
¼ Cup Blonde Roux
2 ½ Cup Swiss Cheese, Grated
2 Tbs. Cream Sherry
In a large stock pot sauté onion, garlic, and thyme in olive oil. Add the broth, corned beef, sauerkraut, carrots and bay leaf, bring to a boil and simmer for 45 minutes.
Remove bay leaf and add cheese and sherry. Stir until cheese melts. Serve with rye croutons.
Reuben Birthday Dip
My Cousin Reuben’s Birthday Dip
1 Lb. Corned Beef, Chopped
16 Oz. Sauerkraut, Chopped
1 Cup Thousand Island Dressing
1 ½ Cups Swiss Cheese, Shredded
3 Oz. Cream Cheese, Softened
1 Tbs. Horseradish
Place all ingredients in a crock pot and cook on low for 3 hours.
