Here is another wonderful shortbread cookie recipe. While this one also is flavored with citrus, it has a little chocolate too for the chocoholic who lurks in all of us.
Unlike the lemon shortbread, this recipe contains an egg. Although not necessary or even common, the egg adds extra richness.
When zesting citrus, be sure to only remove the bright orange part of the peel. If you go too far and reach the white pith, the zest will be bitter.
This shortbread is perfect served with coffee or even a tall glass of milk.
Chocolate Chip Orange Shortbread
- 1 cup (2 sticks) butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla
- 1 teaspoon finely grated orange zest
- 2 1/4 cups flour, sifted
- 1 cup mini chocolate chips
Preheat oven to 350. Have ready a very lightly greased 13×9 inch pan.
In a mixer bowl, cream together butter and sugar. Beat in egg , vanilla and orange zest on low speed. Gradually beat in flour. Fold in 1 chocolate chips. Press onto bottom of prepared pan.
Bake for 30-35 minutes or just until top is light brown. Cool completely in pan on wire rack. Cut into squares.
Makes 16-24 squares
