Out today is Lisa Lillien’s latest cookbook “Hungry Girl 200 Under 200: Just Desserts” (Griffin, $19.99), and the popular author and cooking show host was on the “Dr. Oz Show” today to show how quickly and easily you can whip up a dessert that won’t wreck your weight-loss plan.
One of the recipes she demonstrated on Tuesday’s show was her Ooey-Gooey Apple Pie Cones, which use premade sugar cones as the base for an apple pie filling, and each cone is only 84 calories, including the whipped topping.
This is Lillien’s 10th cookbook, but this time it’s nothing but desserts – 200 of them and all of them 200 calories or less. And there are no retreads – these are all new recipes.
The book is organized by type of dessert, which include:
- Cake Mugs and More Desserts in a Mug
- Cake Pops
- Cakes and Cheesecakes
- Brownies and Fudge
- Pies and Cutie Pies
- Softies and Whoopie Pies
- Freezy Dessert Sandwiches
- Ice Cream Cupcakes and Other Frozen Treats
- Crunchers and Crunchettes
- Crunchcakes and Dessert Cones
- Cream Fluff Cups, Cream Fluff Stacks and More Dough-Bottomed Desserts
- Trifles, Parfaits and Crème Brulees
- Fruity Fun
- Desserts in Disguise
In addition, you can search for desserts by flavor, time of preparation, or number of ingredients. And the introductory chapter goes over the Hungry Girl list of favorite products, milk swaps, egg substitutes, and the 411 on types of sweeteners – nutritive and otherwise.
And here’s that recipe for the Ooey-Gooey Apple Pie Cones:
Ooey-Gooey Apple Pie Cones
Makes 5 servings (Serving size: 1 cone)
1 tsp cornstarch
1 1/2 cups peeled and chopped Fuji apples
1 tbsp granulated white sugar
1/8 tsp vanilla extract
1 tsp cinnamon
5 sugar cones
1/2 cup of low-fat whipped topping
In a small nonstick pan, combine cornstarch with 1/4 cup cold water and stir to dissolve. Add apples, sugar, vanilla, and salt. Add 1/2 tsp cinnamon and stir well.
Set heat to medium. Stirring frequently, cook until apples have slightly softened and mixture is thick and gooey, 14 to 16 minutes.
Transfer to medium bowl, and let cool completely, about 1 hour. Evenly distribute apple mixture among the cones.
Just before serving, top each cone with 2 tbsp of whipped topping. Sprinkle remaining cinnamon on top.
