Honey is a delicious natural sweetener, but did you know that raw honey is also an antioxidant, an antimicrobial agent, and has anti-vital and anti-fungal properties as well?!
Honey is made by bees for their own nourishment. The bees collect nectar from the flowers which mix with enzymes in the bees’ saliva; this process creates the honey. The bees carry the honey back to the hive and deposit it into cells in the hive walls. The bees flutter their wings rapidly to produce a breeze which ventilates the honey and reduces its moisture content and increases it’s natural sugar concentration which prevents the honey from growing mold and makes it ‘shelf stable’.
Honey comes in many colors, including white, golden, amber, red, brownish and almost black. The flavor and the texture of the honey depend upon the type of flower nectar from which the honey was created. Most commonly available honeys are made from such commonly available flowers as that of clover, alfalfa and heather, honey can be made from all sorts of different flowers, including the flowers of herbs, such as lavender, thyme and lemon balm. Honey is generally at its freshest in the summer and fall months right after it has been harvested, but it is available year-round at local markets such as the Sugarcreek Farm Market, Liberty Market and 2nd Street Market.
