This pasta recipe is absolute delicious — the peanut butter sauce is amazing! It was a recipe inspired by a to-die-for sauce and a love for pasta. This is a pasta dish that will stick in your mind and you’ll want to try it again and again. Whether or not you like Thai food, you will absolutely love this!
Here is a recipe that can be very healthy, especially if made with whole wheat pasta (or Barilla’s Plus Pasta – which has omega-3 and protein – love this pasta!) The fiber and nutrients from the vegetables combined with the protein and fiber from the pasta and sauce, makes it a good food choice. Since it is delicious, it combines the best of every world!
Sesame oil – which is no slouch in nutrition itself — is the secret to so many wonderful recipes. This is an ingredient you can buy in most any grocery store in the Asian section. You will want to always keep some on hand. The dark sesame oil is used for stir-frying; light is for deep-frying. (And it’s great for your skin and other medicinal uses.)
Pasta with Peanut Butter Sauce Recipe
Ingredients for Pasta with Peanut Butter Sauce:
- 14-ounce box penne pasta
- 3 cups broccoli florets
- 1 small red bell pepper, chopped
- 3 tablespoons olive oil
- 1 ½ cups peanut butter (crunchy or smooth)
- ½ cup sugar
- 5 tablespoons hot water
- 4 tablespoons lime juice
- 2 tablespoons dark sesame oil
- ¾ tsp. red pepper flakes (adjust to personal taste for spiciness, but do include some)
Directions for making Pasta with Peanut Butter Sauce:
Cook penne pasta according to directions on the box, but cook 2 minutes less than recommended. Drain and set aside.
In a large skillet (or the same pot you cooked the pasta in), heat the olive oil over medium-high heat and stir fry the broccoli and red pepper until tender-crisp.
In a saucepan, combine the peanut butter, sugar, hot water, lime juice, sesame oil and red pepper flakes. Over low heat, stir this mixture until it is combined and peanut butter is melted.
Combine the pasta, broccoli and peanut sauce, and mix together. Serve topped with shredded or shaved parmesan cheese.
