This chicken tetrazzini is an amazing recipe; chicken and pasta in a delicious sauce topped by bread crumbs is absolutely delicious. If you want to make a memorable chicken dish, here is the recipe for you! Tetrazzini seems to be one of those dishes we’ve heard about, but most of us have never tried – and it is well worth trying!
This recipe combines pasta with poultry in a remarkable sauce, and it’s prepared with cooked chicken or turkey, so is perfect for leftovers. You can use whatever pasta you have on hand – egg noodles, linguini, spaghetti, etc., as it tastes great with everything.
Turkey tetrazzini originated in San Francisco; named after a famous Italian opera singer, Luisa Tetrazzini, who performed there in the early 1900s. Once you taste it, you will know why it’s still enjoyed over 100 years later. (Listen to some opera music while you cook it!)
Ingredients for Tetrazzini:
- 12 ounces of pasta (egg noodles, linguini, spaghetti, etc.)
- 4 cups mushrooms, sliced
- ½ cup butter (divided)
- ¼ cup flour
- 1 ¾ cups milk (1/4 cup of it can be cream)
- 2 cups chicken broth
- ¼ cup brandy (sherry, vermouth, or dry white wine work well, too)
- 2 tablespoons lemon juice
- 2 tsp. salt
- ½ tsp. pepper
- 2 tablespoons sugar
- 1 tsp. nutmeg
- 3 cups chicken or turkey (cooked and cut into bite-sized pieces)
- 1 cup peas
- 2/3 cup parmesan, shredded (divided)
- 1/3 cup Swiss cheese, shredded
- 1/3 cup fresh bread crumbs (made by rubbing fresh bread over a cheese grater)
Directions for making Tetrazzini:
Cook the pasta in salted water 2 minutes less than the package directions; drain it and set it aside.
Cook the mushrooms in 3 tablespoons of the butter, 5 – 10 minutes; set aside.
In a large pot, melt ¼ cup of butter, stir in the flour, and cook, stirring constantly, for at least 1 minute. Whisk in the milk, cream, broth, and brandy. Bring to a simmer and cook over medium heat until thick (5 – 8 minutes) stirring constantly.
When the sauce has thickened, stir in the lemon juice, salt, pepper, and sugar. Add the pasta, mushrooms, chicken (or turkey), peas, 1/3 cup of the parmesan and the 1/3 cup of Swiss cheese.
Transfer the mixture to a 9×13 buttered baking dish. Mix the remaining ½ cup parmesan and the bread crumbs together, and sprinkle over the top. Dot with the remaining 1 tablespoon of butter. Bake at 375 degrees for 30 minutes.
