Sweet delicious cookie-like topping over a bed of juicy ripe strawberries – this is strawberry cobbler! It is like a really, really good strawberry shortcake, only better! It’s hard to imagine, but true!
Of all the recipes for strawberries, it’s interesting that cobbler seems uncommon. The strawberries and baked topping go so well together – like a marriage made in heaven! Although this dessert may disappear quickly, it gets better after it sets for a day. Don’t refrigerate, it tastes best at room temperature.
This recipe calls for buttermilk (traditionally the liquid left over after churning butter). Buttermilk is now first homogenized then mixed with a culture, the result is like a thickened, tart, soured milk. If you don’t have buttermilk (or powdered buttermilk) on hand, you can easily substitute another ingredient. Use an equal amount of vanilla or unflavored yogurt (not the type that has fruit added in or it will change the taste of the recipe), use an equal amount of sour cream, or stir a tablespoon of vinegar into a cup of milk (let it set on the counter for 15 minutes or so before using it).
Strawberry Cobbler Recipe
Ingredients for Strawberry Cobbler:
- 6 – 7 cups strawberries, hulled and sliced
- 1 cup sugar, divided
- 2 cups flour
- 2 tsp. baking powder
- ¼ tsp. baking soda
- ¼ tsp. salt
- ¾ cup butter, softened
- 1 cup buttermilk
- Powdered sugar
Directions for making Strawberry Cobbler:
Preheat the oven to 375 degrees. Lightly butter a 9×13 baking dish.
Arrange the strawberry slices evenly in the bottom of the prepared baking dish and sprinkle with 1/3 cup of the sugar; set aside.
In a large mixing bowl, stir together the flour, 2/3 cup sugar, baking powder, baking soda, and salt. Add the butter and buttermilk and mix until the batter is course and crumbly.
Put large spoonfuls of the batter evenly over the strawberries and smooth it out as best as possible.
Bake at 375 degrees for 35 minutes or until the top of the cobbler is golden brown. As soon as you remove it from the oven, sprinkle it with sifted powdered sugar. Cool slightly prior to serving or serve at room temperature.
